Just so folks are aware, I've been editing a post in Truvy's guide post (and edits don't show an updated time in the "Latest Posts") but I posted a few fishing spots that seemed worthwhile for grinding, along with posting a link to a spreadsheet for detailing fish & bait correlations that I've been updating that's sitting on my dropbox. Right now my play time is kind of sporadic, due to splitting time between going through the main storyline with a friend and actually fighting the servers to log on, but I'll keep posting updates as I can.

The other option is probably blacklip oysters since alchemists use that for an easy high level recipe which goes into +crit/+int mage gear I believe.

If you're on a new server, I think a lot of it has to do with people being able to level gathering much faster than crafting. Crafters will probably have to catch up to be able to actually utilize the stuff you're selling.
You might want to look into the various corals. I know back in 1.0 red coral sold like crazy as it was used for high level goldsmith synths. As you said, sharks seem to be pretty popular, but again, among the high level crafting community. Whitelip oyster could be useful as well as it's needed to craft the fishing hat..but more high level crafting stuff. XD
Personally I've just been listing everything on the markets that have a recipe associated with it, if it's reasonable to do so. If it has a vendor selling price, I list it a bit under that, and then try to find a reasonable price for the HQs.
