I've poked around a little, so sorry if I missed this already having been obviously covered, but I was wondering if anyone knew of a list of what bait to use for specific guildleves?
So far pill bugs have worked fine, but I'd hate to tank a leve just because I happened to have the wrong bait.

Normally the fish you are trying to obtain through leves have a normal version as well (Plumb Bianaq Bream -> Brianaq Bream or Aquarium Monke Onke -> Monke Onke).
Look up the normal version of the fish on this site and see the prefer bait of this fish. The one you are trying to obtain through the leve will bite on the same bait.
Also check out the depth as this will also normally be the same saving you even more time.

That makes perfect sense. I can't believe I hadn't noticed that sooner. I wish there was some sort of way to tell in-game, as there was a time when wonderful sites like this didn't exist. Just makes it all the more appreciated!

There are indicators in game, it just takes a bit of experimentation to figure it out. Fortunately we have pretty much all that data here. :) If you have the correct bait equipped for a fish, you'll get the message "The fish seem to be biting on..." and once you catch a fish, the next message that comes up is "You sense Fish..." giving you an idea whether to move your depth up, down or if you're in the right spot. This works with mining and botany as well, though not in the sense of bait, but adjusting where you move the slider to target the resource you're after.
