I know that to begin fishing, the starting location is:
Limsa Lominsa: Louviaune (Fisherman’s Guild – Lower Limsa Lominsa)
Gridania: Humphrey (Rosewood Halls)
Ul’dah: Tataroga (East of Adventures Guild)
Where do I go to begin Botany and Mining?

What do you mean by 'begin'? Do you mean "Where can I buy a Weathered tool?" If so, just go to the Fieldcraft Ward in any city. There's an NPC that sells the weathered tools for all DoLs in the middle.
If that's not what you meant, then I'm afraid you'll need to clarify. |

You can also buy the starting gear for most jobs (including Botany and Mining) at the shops inside the adventurer guilds of each city, in the same area you get your leve quests from.
Just look around for the NPC selling stuff:
Gridania: Zagylhaemr
Limsa: Tylswaen
Ul'dah: Etgar
